Let the Merry begin!
It’s that time of the year and there is no better way to get into the holiday season than with a cup of hot mulled apple cider. After some research and experiments, I have come up with what I think is a really lovely mulling mix blend. Here are the ratios that I used:
5.5 parts cinnamon sticks
2 parts whole allspice
2 parts whole star anise
1.5 parts whole cloves
2 parts crystallized ginger
2.5 parts craisins
2 .5 parts dried orange rind (choose oranges with thicker rinds)
2 parts dried apple
Peel oranges rinds into thin strips. Peel apples and discard peel. Dice apples into very small cubes. Place rind and apple cubes on a parchment lined baking sheet and back at 200ᵒF for an hour or until dried out. Place cinnamon sticks in a large plastic bag and crush with hammer until broken into small pieces. Slice the crystallized ginger into small strips. Combine all of the ingredients and your mulling mix is complete.
Now it’s time to mull. What you’ll need:
3 TBSP of mulling mix
1 bottle of Cidermaker’s Select
1 cup of apple juice
2 TBSP brown sugar
Splash (or large splash) of brandy or apple liqueur
Place mulling mix in a cheesecloth pouch. Add pouch and all other ingredients to a large saucepan. Cover and simmer for 20 minutes.
